Sushi Bake

Ingredients

  • 2 cups sushi rice
  • 2 ½ cups water
  • ¼ cup rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt
  • 1 lb imitation crab (or cooked salmon), shredded
  • ½ cup cream cheese, softened
  • ½ cup mayonnaise (preferably Japanese-style like Kewpie)
  • 2 tbsp sriracha (adjust to taste)
  • 1 tsp soy sauce
  • 1–2 sheets nori (seaweed), cut into small squares
  • 2 tbsp furikake seasoning
  • 2 green onions, sliced
  • (optional) avocado and cucumber slices

Instructions

1. Cook the rice
2. Season the rice
3. Add furikake
4. Make the seafood mixture
5. Assemble
6. Bake
7. Garnish and serve
