Ingredients

Meatloaf

  • 1 ½ lbs ground beef (80/20 preferred)
  • 1 cup breadcrumbs (plain or Italian)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • ¾ cup milk
  • ⅓ cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried parsley (or 2 tbsp fresh)

Glaze

  • ½ cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp mustard

Instructions

1. Preheat oven
Preheat the oven to 375°F and lightly grease a loaf pan or line a baking sheet.

2. Mix ingredients
In a large bowl, combine the ground beef, breadcrumbs, onion, garlic, eggs, milk, ketchup, Worcestershire sauce, and seasonings. Mix gently until just combined.

3. Shape the loaf
Form the mixture into a loaf shape and place it in the pan or on the baking sheet.

4. Make the glaze
In a small bowl, mix the ketchup, brown sugar, and mustard.

5. Add glaze
Spread half the glaze over the top of the meatloaf.

6. Bake
Bake for 45 minutes, then remove and spread remaining glaze on top. Return to oven and bake another 15–20 minutes, until internal temperature reaches 160°F.

7. Rest and serve
Let the meatloaf rest for 10 minutes before slicing to keep it juicy.
