Mango Salsa

Ingredients

  • 2 ripe mangoes, peeled and diced

  • 1/3 cup red onion, finely diced

  • 1 jalapeño, seeded and minced (leave seeds if you want more heat)

  • 1/2 red bell pepper, diced

  • 1/4 cup fresh cilantro, chopped

  • Juice of 1 lime

  • 1/4 tsp salt

  • Optional: 1/2 avocado, diced

Instructions

1. Dice the mango

Peel the mangoes and cut the flesh into small cubes. Place in a medium mixing bowl.

2. Prep the veggies

Finely dice the red onion, jalapeño, and red bell pepper.

3. Combine veggies

Add the onion, jalapeño, bell pepper, and cilantro to the bowl with the mango.

4. Add citrus

Squeeze fresh lime juice over the mixture and sprinkle with salt.

5. Mix gently

Stir everything together carefully so the mango keeps its shape.

6. Chill and serve

Let the salsa sit for about 10–15 minutes to allow the flavors to blend. Add avocado right before serving if using.
