Chicken Noodle Soup

Ingredients

      • 1 tablespoon olive oil

      • 1 small onion, diced

      • 2 carrots, sliced

      • 2 celery stalks, sliced

      • 3 cloves garlic, minced

      • 8 cups chicken broth

      • 2 cups cooked shredded chicken (rotisserie works great)

      • 2 cups egg noodles

      • 1 teaspoon salt (adjust to taste)

      • ½ teaspoon black pepper

      • ½ teaspoon dried thyme

      • 1 bay leaf

      • Fresh parsley or lemon juice, for finishing (optional)

Instructions

1. Build the base2. Add the aromatics3. Pour in the broth

Add the chicken broth and bring to a gentle boil.

4. Cook the noodles5. Add the chicken6. Finish and serve

Remove the bay leaf and taste for seasoning. Finish with fresh parsley or a squeeze of lemon if desired, then serve hot and enjoy!
