Mediterranean Wraps

Ingredients

For the wraps:

  • 4 large tortillas or flatbreads (like pita or lavash)
  • 2 cups cooked chicken (grilled or rotisserie), sliced
    (or substitute chickpeas for a vegetarian option)
  • 1 cup chopped romaine or spinach
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, diced
  • ¼ red onion, thinly sliced
  • ½ cup crumbled feta cheese
  • ¼ cup sliced olives (Kalamata preferred)

For the tzatziki sauce:

  • 1 cup plain Greek yogurt
  • ½ cucumber, grated and squeezed dry
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tbsp fresh dill (or 1 tsp dried)
  • Salt and pepper to taste
