Brown Sugar Blondies

Ingredients

  • ½ cup (1 stick) unsalted butter, melted and slightly cooled

  • 1 cup packed brown sugar

  • 1 large egg + 1 egg yolk

  • 1 tsp vanilla extract

  • 1 cup all-purpose flour

  • ½ tsp baking powder

  • ½ tsp salt

  • Optional mix-ins: chocolate chips, white chocolate, butterscotch chips, chopped nuts (½–¾ cup)

Instructions

1. Preheat and prep

Preheat oven to 350°F. Line an 8×8-inch pan with parchment paper or lightly grease it.

2. Mix the wet ingredients

In a bowl, whisk together melted butter and brown sugar until glossy. Add the egg, egg yolk, and vanilla, whisking until smooth.

3. Add the dry ingredients

Stir in flour, baking powder, and salt just until combined. Gently fold in any mix-ins you’re using.

4. Bake

Spread batter evenly in the pan. Bake for 20–25 minutes, until the edges are set and the center looks slightly underbaked.
