Homemade Pop-Tarts

Ingredients

Pastry

  • 2 cups all-purpose flour

  • 1 tbsp sugar

  • 1/2 tsp salt

  • 1 cup (2 sticks) cold unsalted butter, cubed

  • 1/4–1/3 cup ice water

Filling

  • 3/4 cup thick jam or preserves (strawberry, blueberry, raspberry—dealer’s choice)

Egg Wash

  • 1 egg

  • 1 tbsp milk or water

Glaze (optional)

  • 1 cup powdered sugar

  • 1–2 tbsp milk

  • 1/2 tsp vanilla extract

  • Sprinkles

Instructions

1. Preheat the oven and make the dough

Preheat the oven to 375°F. In a bowl, whisk flour, sugar, and salt. Cut in the cold butter until the mixture looks like coarse crumbs. Add ice water a little at a time until the dough just comes together. Split into two disks, wrap, and chill for at least 30 minutes.

2. Roll and cut

Roll one disk out on a floured surface into a large rectangle (about 1/8-inch thick). Cut into even rectangles (roughly 3×5 inches). Repeat with the second disk—you should have an even number.

3. Fill

Place half the rectangles on a parchment-lined baking sheet. Spoon about 1 tablespoon of jam into the center of each, spreading slightly but leaving a border.

4. Seal 

Brush edges with egg wash, top with remaining rectangles, and press edges with a fork to seal. Poke a few holes on top for steam. Chill for 10 minutes.

5. Bake

Bake at 375°F  for 20–25 minutes, until lightly golden and cool completely.

6. Finish and enjoy!

Mix glaze ingredients until smooth. Spoon over cooled pastries and add sprinkles if using. Let it set and then enjoy this fun breakfast treat.
